GBBO Week 2 - Lemon Drizzle Traybake with Coconut Glaze

It's that time of the week again with Great British Bake Off and how amazing that it was CAKE WEEK! The tiered cakes they made in the third round were incredible and I actually love cake so much it has to be one of my top 5 favourite foods, maybe that's a bit sad to some but hey, life is short. EAT THE CAKE. Soooooo I have made a delicious tray bake! I have never ever incorporated any kind of lemony citrusy flavours in my past bakes and I don't know why because it tastes so yummy.

So here we have it - a delicious lemon drizzle tray bake made a wee bit healthier than the one you're used to PLUS we've got some coconuts in there and I just love how they complement one another don't you?

Make ahead of occasion


Prep: 30 minutes + 2 hours chilling
Cook: 25 minutes Serves: 8


Lemon Drizzle
150g Oat Flour
50g Self-raising
75g Coconut Flour
40g Coconut Sugar
3 Eggs
125g Natural Yoghurt
2 Lemons for zest
60ml lemon juice from both lemons
2/3 tbsp honey
Coconut Glaze
1 can coconut milk
1 tbsp lemon juice
1 tbsp honey
Optional toppings - lemon zest, dessicated coconut/coconut pieces


1. Preheat your oven to 180F/360C. Line a square baking tray (mine was 20x15cm).
1. Make your oat flour in a food processor, then put into a bowl with the other flour and sugar.
2. Add your lemon zest and then lemon juice and give a good mix.
3. Add your eggs mixing between each egg. Add the honey and the yoghurt. Once mixed together it will sort of have a biscuity, doughy texture which is fine.
4. Add mixture to baking tray and bake for 25 minutes. Once baked leave to cool.

1. Make your glaze.

2. Add all ingredients to a small saucepan and bring to a boil. Then reduce heat on a low boil for about 10 minutes. I put mine on number 6. Keep whisking it together, it will start to thicken on a lower heat.
3. Once it is starting to stick to the whisk, take off heat, pour into a bowl and place in the fridge for about 2 hours to thicken up.
4. Pour over traybake and then add toppings before putting back into fridge to firm up.
5. Enjoy!
