Sweetcorn and Carrot Vegan Fritters with Creamy Dip

Fritters are the best invention ever. I only discovered them a year or so ago and I  am obsessed! So easy to make with few ingredients and just as easy to gobble up. Great for a snack or a for adding to a main meal, there are endless additions to these. Have a go at making them yourself and changing the vegetables up. 


Prep: 5 minutes
Cook: About 10 minutes
Serves: Makes 8 fritters (already ate some before the photo shoot commenced oops!)


160g Plain Wholmeal Flour
120ml Water
100g Sweetcorn 
1 Medium carrot grated
3 Spring onions
1 tsp Garlic powder
1 tsp Paprika
Salt and Pepper
3 tbsp Vegan Mayonnaise
1 tsp Tomato puree
1 tsp Garlic powder
1 tsp Paprika
Salt and Pepper


✿Mix together dry ingredients then add in vegetables. 
✿Add the water and then mix together until it forms a batter.
✿Melt a bit of oil in a pan and once it is ready add spoonfuls of mixture into the pan - I could fit 3 fritters in my pan but if your pan is bigger add more. Fry for a few minutes on one side till golden brown then flip them over to fry the other side. Repeat process until mixture has gone.
✿I managed 8 medium sized fritters but you make more smaller ones. 
✿To make your dip simply add all of the ingredients into a bowl and mix until well combined and smooth. Enjoy!
