Mediterranean Pasta

A heart pasta dish full of tasty Mediterranean veggies! Perfect to get your 5-a-day in!



The Mediterranean Diet is supposed to be one of the healthiest ways of eating. A completely balanced diet with veggies, carbs and protein (which a lot of them get from fish) it's also incredibly easy to maintain. As Veganuary is here, I thought I would share my favourite pasta dish that is really simple - mix around with different veggies to suit your tastes!


Recipe

Prep: 5 minutes
Cook: 25 minutes
Serves: 4

Ingredients

400g Wholemeal Pasta
2 Aubergines
2 Peppers
2 Red onions
100g Black olives
1 tbsp Olive oil
2 tins 400g Chopped tomatoes
1 tsp Basil
1 tsp Oregano
Pinch of salt and pepper


Method

✿Start by adding boiling water to a large saucepan. Bring it back to boil and add your pasta.
✿Meanwhile heat a frying pan on a medium heat with the olive oil. Add in the onions and cook for about 3 minutes until turning slightly brown. Then add in the peppers and aubergines and cook for another 5-10 until softened. Mix in your spices. Once cooked take of the heat and leave to the side until your pasta has cooked.
✿Drain the water from the pasta and put back on the hob. Add the cooked vegetables including the olives and the tinned tomatoes and mix everything together. Once warmed through take off the heat and serve. Enjoy!
