Chocolate Love Heart Cake



What better way to say 'I Love You' than with a heart shaped cake! This is a really easy recipe for that perfect chocolate cake and I'm pretty sure you won't have just one slice. Chocolatey, moist, unbelievably moreish, what more can you want? Oh yeah and it's in a heart shape and pink!

Recipe

Prep: 15 minutes
Cook: 20-25minutes
Serves: 8-10

Makes x2 heart shaped cakes OR it will make two 8 inch round cakes

Ingredients

Cake
300ml Soya milk 
275g Self-raising flour
175g Caster sugar
4 tbsp Cocoa powder
1 tbsp Lemon juice
3 tbsp Maple syrup
150g dairy free butter (I use vitalite)
1 tsp Instant coffee granules
2 tsp Baking powder
1 tsp Baking soda
Buttercream
250 dairy-free butter 
400g Iciing sugar
2 tbsp Cocoa Powder
1 tbsp soya milk
1 tsp vanilla extract
Pink Food colouring
White fondant, candy canes optional

Method

✿Preheat your oven to 350℉/180℃ and line your cake tins with baking paper.
✿In a bowl mix together the soya milk and lemon juice to make your 'buttermilk'. It will look curdled after about 5 minutes.
✿In a saucepan over a medium heat, melt together the maple syrup, butter and coffee granules and then set aside to cool.
✿Sift together the flour, sugar, cocoa, baking powder and baking soda in large mixing bowl.
✿Pour in the 'buttermilk' and the syrup mixture and stir till you have a smooth batter. 
✿Divide the mixture into the prepared cake tins and cook for 30-35 minutes or until a knife comes out clean.
✿Meanwhile make your buttercream. Using an electric mixer, whisk the butter until it becomes pale and creamy. Add in your icing sugar a bit at a time until combined.
✿Take a few spoonfuls of buttercream into a separate bowl and add your cocoa powder and milk if needed to make a chocolatey buttercream.
✿Once your cakes have cooled, level them and spread over your chocolate buttercream then place the other cake on top.
✿With the other buttercream, add the pink food colouring and mix together until desired pinkness and decorate. Enjoy!
