Banana Bread

I've already expressed my love for banana bread, then remembered that my previous recipe wasn't vegan friendly! So here it is, still delicious and so moreish, I was tempted to eat at least half, I've heard many ways to enjoy a banana bread so my recommendations to you for some toppings when having a slice: peanut butter, biscoff, jam and berries, and some yoghurt, how tasty do they sound!

Prep: 5 minutes
Cook:25-30 minutes
Serves: 8-10


225g Self-raising flour
100g Brown sugar
3 bananas mashed or blended + half for decoration
85g Melted dairy-free butter
1 tsp Baking powder
2 tsp Cinnamon
50g Sultans/walnuts optional


✿Preheat your oven to 350℉/180℃ and line a loaf tin with baking paper - I used a 1lb one but if you have bigger that would be better I think.
✿Melt your butter and leave to the side. In a mixing bowl mash your bananas with a fork or place in a blender, this speeds up the process and makes them really creamy. Add you sugar and butter and mix together.
✿In a separate mixing bowl combine flour baking powder and cinnamon. Add the banana mixture and combine together. 
✿Fold in your sultanas or nuts and then pour into prepared loaf tin.
✿Bake for 30 minutes or until a knife comes out clean. Cover with foil if the top stars to brown and continue baking until the middle is done. 
I like mine with a big mug of tea! Enjoy.
