Bourbon Brownies

I am so very happy that Bourbons are accidentally Vegan, can that get any better? Actually I'm still waiting for a vegan jammie dodger but I'll be fine for now. Plus what more appropriate brownie topping than a choccy biscuit?! Have fun making this recipe, please tag me if you try it! @bakelikeavegan?_ on Instagram.

Raspberry Brownies

Prep: 20 minutes
Cook: 25-30 minutes
Serves: 15


250g Plain flour
200g Caster sugar
250ml Soya milk
1 tbsp Apple Cider Vinegar
270g Apple sauce
1 tbsp Instant coffee granules
1 tsp Vanilla extract
1 tsp Baking powder
60g Cacao
200g Dark chocolate chunks
Bourbons for topping optional


✿Preheat your oven to 350℉/180℃ and line a rectangle baking tray with parchment paper. 
✿Add the Apple cider vinegar to the soya milk and let it curdle for a few minutes. Add boiling water to your coffee and let it cool down. 
✿In a large mixing bowl sift together the flour, cacao together then add the sugar, baking powder and salt.
✿In a separate bowl combine your apple sauce with the milk, coffee and vanilla extract and mix well. Add to the flour mixture. Mix in your chocolate chunks, this well give the brownies their fudginess!
✿Pour your batter into the prepared tin making sure it is smooth. Place bourbons on top however you like.
Bake for 30 minutes or until a knife comes out mostly clean. Brownies can be a bit under-baked to keep them moist. 
✿Allow them to cool before slicing into squares and serving. Enjoy!
