Chocolate Orange Cupcakes


A new found love I now have for chocolate orange, if only I had bothered to enjoy a Terry's Chocolate Orange prior to my vegan days! This is where my handy baking skills come in to recreate such classic with a delightful chocolate orange cupcake. A tangy orange sponge topped with a creamy chocolate buttercream, I enjoyed every bite. If you're a lover of chocolate orange, you'll love these even more.

Recipe

Prep: 15 minutes
Cook: 18-20 minutes
Serves: 12 cupcakes


Ingredients

Cupcakes
200g Self-raising flour
200g Caster sugar
75g Vegan butter
100ml orange juice (or more soya milk)
100ml soya milk + 1tbsp ACV
2 tsp Orange extract
1 tsp Baking soda
Pinch of salt
Zest of 1 large orange
Buttercream
250g Vegan butter
400g Icing sugar
4 tsp Cocoa powder
1tsp Vanilla extract
Splash of soya milk if needed
Orange segments to top optional
Melted dark chocolate optional

Method

✿Preheat the oven to 180℃ and line a cupcake tray with cases.
✿Add the ACV to your soya milk and leave it for a few minutes. Melt your butter and leave to cool.
✿In a bowl, combine flour, sugar. baking soda, salt and orange zest. 
✿Add all of the wet ingredients and mix till combined. You can add a dash of flour if it is too runny.
✿Fill your cupcake cases about ¼ full then bake for 18-20 minutes or until a knife comes out clean. Leave to cool before decorating.
✿To make your buttercream, using an electric mixer, beat your butter and veg block till smooth and pale. Add the icing sugar and cocoa powder gradually until the buttercream has thickened. Add the vanilla and mix till desired consistency. 
✿Pipe onto cupcakes then top with the orange segments and drizzle the melted chocolate. Enjoy!
