Peanut Butter Banana Blondies


These have got to be the BEST things I have ever made. I may have said that before, but I honestly don't know how I restrained myself from eating the whole tray! My two favourite flavours are always peanut butter and banana and having them together is perfectly harmonious I think. I'm definitely thinking of more recipes I can bake with these two special ingredients and I may say that with most things but you'll have to hold me to it. 

These blondies are banana based, smooth, moist, almost fluffy with a huge spread of peanut butter frosting topped with sliced bananas because you really can't have enough. I think next time I might cook the bananas on top and change it up a bit, something for you try if you do :)

Recipe

Prep: 10 minutes
Cook: 25-30 minutes
Serves:  12 blondies


Ingredients

Blondies
150g Vegan butter
220g Light brown sugar
1 1/2 Bananas mashed or blended
1 tbsp Vanilla extract
175g Plain flour
Pinch of salt
60ml Soya milk
Frosting
125g Peanut butter
3tbsp Vegan butter
200g Icing sugar
100ml Soya milk
2 Bananas sliced on top optional





Method

✿Preheat your oven to 180℃ and grease and line a brownie tray.
✿Melt your butter in the microwave or in a pan on the hob and leave to cool. Mash your bananas and then add to bowl along with milk, brown sugar and vanilla and stir to combine.
✿Combine the flour and salt and then add to banana batter.
✿Pour into tray and spread evenly and then bake for 25 minutes until golden brown.
✿Once baked leave to cool.
✿To make your frosting, use an electric whisk and whisk your butter and peanut butter together. Gradually add your icing sugar till combined. If you like a runny frosting like mine add all of the milk 1 tbsp at a time. If you like a stiffer frosting don't use as much milk. 
✿Once blondies are cool spread over your frosting and top with sliced bananas. Enjoy!
