Who doesn't love a tray bake recipe? I love the nuttiness of the almond butter without the added crunch though you could stir in some whole almonds which I also think could work well. And the fresh blueberries hit the right sweet spot. You can totally make your own blueberry jam for the drizzle on top I just haven't quite cracked that yet!
My flapjacks can easily be eaten for a quick grab-and-go brekkie, a snack or dessert whichever you fancy, plus they only require 7 ingredients!

Serves: 15 squares
Ingredients
250g oats100g ground almonds
120g vegan butter
100g fresh blueberries + extra handful
3 tbsp almond butter
2 tbsp maple syrup
100g blueberry jam homemade or store bought

Method
✿Preheat your oven to 180℃ and line a tray with baking paper.✿In a saucepan, melt your butter, maple syrup and almond butter until combined. Don;t let the mixture boil.
✿In a large bowl, mix together the oats and ground almonds then add the melted mixture and combine. Fold in your blueberries being careful not to squash them.
✿Pour into your baking tray and smooth out evenly. Add some blueberries on top and then bake for about 20 minutes or until golden on top.
✿Melt your blueberry jam a little in the microwave so that you can drizzle on top of your flapjacks. Enjoy!
