Cranberry, Pistachio & White Chocolate Cookies

These delicious cookies are soft and chewy with some added crunch. 

I haven't made cookies in soooo long and it's not something I was too familiar with. Then I remember how easy they are to make and how delicious!
I love all of the flavours in these ones, perfect for Autumn and you can even add in some spices like cinnamon or nutmeg. I know I've got lots of ideas for more cookie recipes to come soon!

Double Chocolate Cookies
Mini Egg Easter Cookies

Prep: 10 minutes
Cook: 12 minutes
Serves: Makes 18 cookies


115g Trex or vegan butter melted
80g Light brown sugar
75g Caster sugar
80ml Plant based milk
1 tsp Vanilla extract
¼ tsp Baking soda
Pinch of salt
190g Plain flour
80g White chocolate
100g Dried cranberries
100g Pistachios


✿Preheat your oven to 180℃. Line two baking trays with baking paper.
✿In a mixing bowl combine the flour, salt and baking soda. In a separate bowl combine the butter with the sugars and stir until combined until there are no more grains of sugar. Stir in the milk and vanilla.
✿Add the dry ingredients to the wet and stir until just combined.
✿Fold in the white chocolate, cranberries and pistachios and evenly mix until you have a sticky dough. Let it sit for 5 minutes until it comes together.
✿Take 2 tablespoons of dough and drop on the baking trays. Keep going till you have no more mixture left, but keep a bit of space between each cookie. This is easier if you have an ice-cream scoop. I got 18 out of my mixture.
✿Press down lightly on each cookie to flatten out a bit then transfer to the oven and bake for 10-12 minutes. Always better a little under-cooked so they are softer as they well harden as they cool. 
✿Leave on a cooling rack until ready to eat, they are nice to eat when warm. 
✿Store in an airtight container at room temperature and consume within a week. Can also be frozen and then defrosted completely before consuming. Enjoy!
