Chocolate Orange Brownies

Fudgey, chocolatey, orangey, all in one bite

I've mentioned before I am not the biggest fan of chocolate orange, but after I made these I am extremely willing to seek more desserts of this combination. Starting with chocolate of course and the new Vegan Galaxy Chocolate Orange fits the bill perfectly hence why they made a lovely debut. These brownies are everything I wanted them to be and it's all thanks to the sweet potato. Please don't let it put you off it is a game changer! From here on I think it will be making appearances.

Raspberry and White Chocolate Blondies

Prep: 15 minutes
Cook: 40 minutes
Serves: 15 brownies


200g Vegan butter
100g Dark Chocolate
100g Galaxy Vegan chocolate orange + extra 50g in chunks
1 tsp Orange extract 
275g Caster sugar
100g Plain flour
50g Cacao powder
250g Sweet potato puree
1 tbsp Maple syrup
Pinch of salt
Toppings optional 
½ Orange sliced into half moons
More dark chocolate melted 


✿Preheat your oven to 180℃ and line a rectangle baking tray with baking paper.
✿Make the sweet potato puree - peel and chop the potato into small chunks, then steam for about 20 minutes until soft. Place in a food processor with the maple syrup and blend into a puree. Leave to cool.
✿Melt the chocolate and butter together in a ban-marie or in the microwave. Save the 50g of galaxy chocolate for later.
✿In a large bowl whisk the puree with the caster sugar until it becomes more of a liquid only a minute or so. Add in the chocolate and orange extract and stir together.
✿Sift in the flour and cacao powder and fold gently. Then fold in the remaining chocolate chunks. 
✿Pour the batter into the baking tray and place the orange slices on top. 
✿Bake for about 40 minutes. it will be gooey so don't over bake unless you like a more cakey brownie.
✿Once cooled drizzle melted chocolate over and then cut in 15 squares. Can be left at room temperature or I like to leave mine in the fridge it has such a lovely texture. Enjoy!
