Spice up your pancake mix with lots of cinnamon and topped with yummy apples!
Another pancake recipe for you, whether it's for Pancake day, breakfast in bed, brunch, a Tuesday, you NEED to have a go at making these. I love using oats in place of flour for pancakes, they just add such a lovely flavour and texture and really thicken them up. I'd like to try adding more spices for more autumnal style pancakes so stay tuned come October!These did take me a little longer than planned, so have all of your ingredients ready to go.

Recipe:
Prep: 15 minutesCook: 5-10 minutes
Serves: 2 people/8 pancakes
Ingredients
Pancakes100g Oats made into a flour
6 tbsp Chia seeds
250ml Soya milk
50-100ml Water
1 tbsp Cinnamon
1 tsp Vanilla extract
Pinch of salt
Topping
2 Pink lady apples chopped into small chunks
1 tsp Cinnamon
Maple syrup

Method
✿If you haven't got oat flour, blitz the oats in a food processor/blender into a fine flour.✿Add the rest of the pancake ingredients and blitz together till combined. Add more water if the mixture is too thick.
✿Heat a large frying pan over a medium heat and add about 2 tbsp per pancake into the pan. I did 2 at a time.
✿Fry on each side for about 2-3 minutes, when you start to see bubbles forming on top it's time to flip the pancakes. Make sure you press down the pancakes once you've flipped them so they spread out.
✿Place the pancakes on a plate to the side and then continue to add batter into the pan until it's all gone.
✿Meanwhile heat another frying pan over a medium heat. Add the apple chunks and then cover with a lid so they start to steam about 5 minutes.
✿Every now and then take the lid off and stir the apples around. Add the cinnamon and cover for a further 2 minutes.
Then take the lid off and leave to fry for 2-3 minutes and once they are brown you can take them off of the heat.
✿Add the apples on top of the pancakes and then drizzle maple syrup over. Enjoy!
