Double Chocolate Cookies

Gooey melt-in-your-mouth chocolate cookies, perfect for dunking!

I just love cookies. I don't know why I haven't made more of them, but starting from now I most certainly will be. This recipe came about whilst trialling others and I have to say I'm loving how they turned out. They are so chocolatey, filled with chocolate chunks and chewy, just how I like them! You can easily bake these for a it longer if you want a crispier cookie but this method is highly recommended :)

120g Vegan butter
110g Caster sugar
110g Light brown sugar
140g Plain flour
60g Cocoa powder
1 tsp Vanilla extract
1 tsp Baking soda
Pinch of salt
2½ tbsp Soya milk
100g dark chocolate chips or chopped up dark chocolate


✿Preheat your oven to 180℃ and line a few baking trays with baking paper. I say a few because the cookies need to spread out when they cook.
✿Add the butter and sugars to a bowl and using an electric mixer cream them together. Add the vanilla and mix in.
✿In a separate bowl, combine the flour, cocoa, baking soda and salt. Add the dry ingredients to the wet and mix together by hand till you have a crumbly texture.
✿Add the soya milk and stir till you have a thick cookie dough. Fold in the chocolate chips and stir - it will be thick but sticky to roll into balls.
✿Using an ice-cream scoop or your hands, roll into small even balls and place evenly spread out on the baking trays - I got 18 from mine but you can do less bigger ones.
✿Bake for about 10-12 minutes - the edges should be firm and the middle soft - they will harden as they cool. Press in a few more chocolate chips as soon as they are out of the oven (optional).
✿Best served warm. Enjoy!
