Pistachio, Courgette, Lime Loaf Cake

Get your greens in with my zesty loaf cake - perfect twist on an afternoon tea!

This recipe wasn't one of my usual's but I had some pistachios to use up so I began my research and this is what I cam up with. I know what you're thinking, do these flavours really go well together? They do, it really works, especially when I finished it off with a very yummy cream cheese icing. 

This loaf cake is SO refreshing, it doesn't leave you feeling stodgy and sluggish but full of the good stuff without thinking that it's really a piece of cake. Honestly you have to give it a go, try something new!

Prep: 10 minutes
Cook: 40-50 minutes
Serves: 8


Loaf cake
170g Courgette finely grated
100g Light brown sugar
100ml Vegetable/Coconut oil melted
70ml Soya milk
2 Chia eggs - 2 tbsp chia seeds + 6 tbsp water mixed
180g Self-raising flour
50g Pistachios chopped + more for topping 
2 limes zest and juice
1tsp Baking soda
1 tsp Vanilla extract
170g Vegan cream cheese - I like Violife
1 tbsp Vegan butter
250g Icing sugar
½ lime - zest and 2 tbsp juice


✿Preheat your oven to 180℃ and grease and line a 1lb loaf tin with baking paper.
✿In a large bowl, mix together the soya milk, oil, chia eggs and vanilla. Squeeze in the lime juice then stir in the grate courgette.
✿Mix together all of your dry ingredients including the lime zest. Fold the dry ingredients into the wet mixture in a gentle motion. Stir in the pistachios till evenly mixed throughout.
✿Pour the batter in the loaf tin and bake for 40 minutes or until a knife inserted comes out clean. Depending on your oven, this could take shorter or longer so check half way.
✿Once cooked, cool in the tin and then turn out on a cooling rack and let it cool completely.
Make the icing.
✿Using an electric mixer whisk together the cream cheese and butter until soft and spreadable. Gradually add in the icing sugar and keep mixing till combined and thick and glossy. Add the lime zest and lime juice and mix together.
✿Spread the icing onto the cake, sprinkle with the pistachios and pop in the fridge to set. Can be served at room temp or straight from the fridge. Enjoy!
