All of the flavours of a beloved carrot cake but at breakfast time!
If you'e anything like me and want something sweet for breakfast i.e a piece of cake then you might be encouraged to make these oats. Been trying to have porridge a lot more lately and I do have a soft spot for overnight oats I quite like cold food, so to incorporate oats with a cake seems acceptable for breakfast. And there's nothing "unhealthy" about it though I use that term lightly, as oats are good for you and it has a vegetable in them, woo! Don't let the idea of veggies in a sweet dish or in porridge put you off as you can't really taste them :)

Recipe
Prep: 5 minutes
Cook: No bake chill overnight or for a few hours
Serves: 2
Ingredients
80g Oats
2tbsp Chia seeds
300ml of Plant milk or water
1 carrot finely grated
2tsp Cinnamon
1tsp Nutmeg
1tsp Ginger
40g Sultanas
30g Walnuts chopped

Method
✿Spoon the oats and chia seeds in 2 bowls or jars. Add the grated carrot and mix together.
✿Mix together the spices then sprinkle over the oats and stir.
✿Pour over the milk or water and stir everything together. You can add the sultanas and walnuts now or add them on top when ready to serve.
✿Chill in the fridge overnight or about 2-3 hours to let the milk soak into the oats. Enjoy!
