Chocolate Pancakes with Chocolate Sauce

Chocolate for breakfast but in pancake form - delicious!


Another pancake recipe for you to eat to your hearts content! I'm actually not usually one for chocolate in breakfast items but I really fancied it, plus the chocolate sauce is so inviting I couldn't resist - double the chocolate! I serve mine with yoghurt (although it looks like melted ice cream which could be a good dessert topper!) and some yummy berries, bananas would also work I think.

Recipe

Prep: 5 minutes
Cook: 10 minutes
Serves: 8 Pancakes


Ingredients

Pancakes
130g Apple sauce
240ml Soya milk
1tbsp Coconut oil melted
1tbsp Maple syrup
120g Plain flour
3tbsp Cacao powder
1tbsp Baking powder
2tsp Cornflour
Sauce
4tbsp Coconut oil melted
2tbsp Maple syrup
3tbsp Cacao powder



Method

✿In a food processor add all of the pancake ingredients and blend together - then let it sit for a few minutes. 
✿Heat a large non-stick frying pan on a medium to high heat. Once warm add about 2 tbsp of the pancake mixture into the pan into circles - I did about 2 pancakes at a time.
✿Once the pancake starts to bubble on top it's time to flip them over with a spatula - usually about 1-2 minutes each side.
✿Remove from the heat and pop on a plate whilst you cook the rest of the mixture. You can make smaller pancakes if you want or larger ones but I managed 8.
✿Make the chocolate sauce - melt the coconut oil and then whisk together all of the ingredients.
✿Stack or plate up the pancakes and drizzle over the sauce. Top with your favourite fruit or more chocolate if you like. Enjoy!
