Zesty lemony pancakes with a poppy seed bite throughout!
I just feel like the best way to start any day is with pancakes so I am making my way through every flavour there is possible to have in pancake form. Never did I think I would be having lemony pancakes but oh my are they delicious and so refreshing. Lemons and poppy seed go hand in hand for some reason and they work ever more so willingly in pancake form. Your new favourite breakfasts await you.

Cinnamon Pancakes with Caramelised Apples
Banana Pancakes
Blueberry Pancakes
Cook: 10-15 minutes
Serves: 8-10 pancakes
2tsp Baking powder
1tsp Baking soda
220ml Soya milk
3tbsp Maple syrup
2tbsp Poppy seeds
Zest + Juice of 1 lemon
1tsp Lemon extract optional
✿Heat up a large non-stick frying pan, alternatively add a bit of oil to a normal pan. Once it is warm, add about 2tbsp of the pancake batter to the pan and using the back of the spoon swirl into a circle shape. Add more batter to fit in more pancakes in the pan - I could do 3 at a time.
✿Let the pancakes cook on one side and then when they start to bubble on top flip them and cook the other side. This is about 1-2 minutes each side.
✿Remove from the pan and place on a plate whilst you repeat the process with the remaining batter.
✿Serve whilst warm and top with some berries, lemon zest, a drizzle of maple syrup or whatever you like. Enjoy!

✿Stir together all of the dry ingredients in a bowl and then add in the wet ingredients and mix till well combined.
