Cinnamon warm apple and nutty almond butter in a delicious sweet potato
This recipe is quite autumnal but I love the flavours so much it had to be done in an instance even if it is nearing on summer time. Adding the cinnamon to caramelised apples really hits the spot and I think along with the almond butter, this is a nod to the American Thanksgiving traditions of sweet potato pies. So maybe you'll save this recipe for when it gets colder or you'll try it now, either way, it's a brilliant breakfast to start your day with and the simplicity of it makes it more exciting.

Ingredients
1 Medium sweet potato about 200g1-2tbsp Almond butter I used Whole Earth
1 Apple - I like braeburn
1tsp Cinnamon
Method
✿Preheat the air fryer to 180℃ for 5-10 minutes. Using a fork, prick the sweet potato all over then place inside the air fryer for 35 minutes.✿Core the apple and chop into small cubes. Heat a non-stick frying pan on a medium-high heat and then add the apples. Fry for a few minutes stirring occasionally then cover with a lid and let them steam for a few minutes more until starting to soften and brown.
✿Remove the lid, add the cinnamon and stir till coated and cook a further 1 minute. Remove from the heat to cool.
✿Once the potato is baked, cut in half and spread a little of the almond butter on both insides. Top with the apples and then drizzle the remaining almond butter on top. Enjoy!
