A refreshing breakfast with sweet berries and a warm sweet potato with minimal effort!
I'm becoming more and more obsessed with sweet potatoes by the minute, I just appreciate how versatile they can be. Which is why I branched out to bring them into my breakfast recipes and I'm glad I did. Potatoes I know can be looked upon as the bad guys but they have so many good vitamins etc, it of course makes sense to have them for breakfast to set you up for a good day. I haven't actually used cream here as that would defeat the object of a healthier breakfast, but if you want this to be more of a dessert you can make a nice coconut whipped cream which would compliment it quite nicely.

Ingredients
1 Medium Sweet Potato about 200g
100g Soya yoghurt I use Alpro
Mixed Berries
Desiccated Coconut optional
Method
✿Preheat the air fryer to 180℃ for about 5-10 minutes. Using a fork prick the sweet potato all over and then place in the air fryer to bake for 35 minutes.
✿Once baked cut in half and top with the yoghurt and the berries then sprinkle over the coconut. Enjoy!
