Breakfast Burrito Wrap

If you can put anything in a wrap why not make it full of delicious breakfast foods!


I don't think I had ever contemplated starting my day with a wrap until I found all of the wonderful things I could put in it. And because this is a burrito style dish why not make it more extravagant than your average avo toast? I've filled these wraps with a yummy scrambled tofu, cherry tomatoes and avocado and you can of course add more delightful things to suit your tastes. A nice and filling breakfast to fuel the rest of your day :) I'm loving wraps so much I've got so many more filling ideas so stay tuned for those.

Recipe

Prep: 5 minutes
Cook: 5 minutes
Serves: 2 wraps


Ingredients

Scrambled Tofu
350g Silken tofu
2 Spring onions
1tsp Nutrional Yeast optional
1tsp Turmeric
1tsp Kala Namak/Black salt
Salt & Pepper
x1 Avocado
8-10 Cherry tomatoes halved
x2 Large tortilla wraps - I used ones with mixed seeds in them





Method

Make the tofu scramble. Heat a little bit of oil in a medium frying pan on a medium heat then add the spring onions and spices and cook for about 2 minutes. Add the tofu and stir around the pan so it is coated in the spices.
✿Use a fork to break it up or mash slightly into smaller pieces. Turn the heat down to low and let it fry for about 5 minutes stirring occasionally and it will thicken more. The remove from the heat.

✿Before I put the wraps together, I heated them up in the microwave for about 20 seconds. Then spoon the tofu scramble in a line, add the tomatoes in another line and then add the sliced or mashed avocado. 
✿Fold the top and bottom of the wrap up, then start to roll on side of the wrap to meet the other. It's a bit fiddly with your hands but it keeps all of the filling inside. You can always wrap another way to suit you. Cut in half and serve. Enjoy!
