Peanut Butter Banana Chia Pudding

A little peanutty pudding perfect for breakfast, dessert or a little snack!


I say it every time I make anything to do with peanut butter and that is that I HAVE NOT made enough desserts or foods that are filled with this deliciousness. I really haven't and I promise to make more recipes filled with endless peanut butter like all the good stuff - there will be brownies, cakes, maybe a pie or tart of some sort. But until then we've got a delightful little breakfast I made with another great combination - peanut butter and banana, yummy! I do love a chia pudding as you know and I really enjoy this for breakfast. It's easy to make and if you've ran out of ideas but have pb, banana and chia seeds in the cupboards you can make this in 5 minutes.

Chocolate Orange Porridge

Recipe:

Prep: 5 minutes
Cook: N/A chill in the fridge overnight
Serves: 1


Ingredients

1 Banana
1 Heaped tbsp peanut butter - I like Pip&Nut, Meridian or Whole Earth
3tbsp Chia seeds about 30g
100ml Soya milk
Topping
Banana 
Peanut Butter
Chopped Peanuts

Method

✿Mash the banana with a fork in a bowl and then add the chia seeds, soya milk and 1tbsp of peanut butter. Leave in the fridge overnight or for a minimum of 2 hours to thicken up.
✿The next morning remove from the fridge and if a bit too thick add a little bit of soya milk and stir to loosen up. 
✿Chop up some banana (I did half) and add this on top of the pudding along with some more peanut butter and a few peanuts. You could always add some berries and a bit of grated dark chocolate would go nicely. Enjoy!
