Salted Caramel Brownies

Gooey fudgy brownies filled with velvety caramel that you won't be able to resist!

Salted caramel for me comes first in every dessert. It's the ultimate flavour that hits my big old sweet tooth right where it wants and I will never tire of it. There are sooooo many recipes that you can use salted caramel in and I've only created the miniscule. But putting caramel in brownies is a game changer and not only were these brownies ultra chocolaty and fudgy, they are now melt-in-your-mouth irresistable and that's what makes them so amazing. I also added some maca powder into my brownies as they add a natural caramelly taste but this is completely optional. 
There isn't anymore for me to say I suppose because they speak for themselves. As I write this I am wondering why I don't have one waiting for me to gobble up!

Salted Caramel Cheesecake

150g Vegan dark chocolate
100g Galaxy Caramel and Sea Salt or more dark chocolate
160g Vegan butter
400g Caster sugar
1tsp Caramel extract - or vanilla
480ml Soya milk
280g Plain flour
40g Cocoa powder
1tsp Maca powder optional
1tsp Baking powder
½ tsp salt
100g Caramel - I use this recipe


✿Make the caramel first either the day before or before you make the brownies. I use this recipe or you can use a store-bought one. 
✿Preheat the oven to 180℃ and grease and line a baking tray with baking paper.
✿Melt the butter and the dark chocolate together in a bain-marie or in the microwave making sure to stir. Remove from the heat once melted.
✿In a large bowl, combine the flour, sugar, baking powder, salt, cocoa powder and maca powder (if using) and mix.
✿Pour in the soya milk, butter mixture and caramel extract and stir till evenly mix together. Break up the galaxy chocolate into small chunks and then fold this into the brownie batter being careful not to over mix.
✿Spoon  half of the batter into the prepared baking tray and then drizzle about 3-4 tbsp of the caramel on top and swirl it around with a knife.
✿Then spoon the remaining brownie batter on top and bake for 30-40 minutes until it doesn't wobble in the centre. If you like gooey brownies bake them for about 30, or more cakey brownies a bit longer.
✿Once baked remove from the oven and drizzle over some more caramel whilst they are still hot. Leave the brownies to cool completely in the baking tray before removing and slicing into squares. Store in an airtight container at room temperature. Enjoy!
