Very Berry Porridge

Start the day with a big bowl of porridge topped with lots of berries!
There is nothing more delightful than lots of berries on my porridge so sweet and delicious and of course the best way to get the good stuff in. I also found these freeze dried strawberries that I wanted to try and I thought would go nicely for my porridge toppings as they have a little crunch to them. I like to make my breakfast recipes simple for you all and I know lots of you always have some sort of berry in your fridge that makes a great addition to your morning porridge. You can mix and match here as much as you like, lots of berries come in different seasons and in the summer is when you get the best strawberries, blackberries and cherries. If you want more, a spoonful of jam wouldn't go amiss!

Blueberry Pancakes

Prep: 5 minutes
Cook: 5 minutes
Serves: 1


50g Porridge
1 tbsp Chia seeds
2tsp Acai berry powder optional
250ml Soya milk or water
1tbsp Maple syurp
50-100g Frozen mixed berries
Freeze-dried Strawberries


✿Combine all of the porridge to a small saucepan on a medium heat. Gently cook for about 10 minutes stirring frequently so it doesn't stick to the bottom of the pan.
✿Place the frozen mixed berries in a small dish in the microwave for about 1-1½ so that they are soft and juicy.
You can either stir the berries into the porridge in the remaining cooking time or top the porridge once its cooked. ✿Add the maple syrup and the freeze dried strawberries. Enjoy!
