Peach Chia Pudding Parfait

A quick and refreshing summer breakfast or dessert with this seasons juicy peaches!

Peaches are really at their best in the summer months when they come in to season and you'll know this because they are plump and juicy and oh so tasty. I'll admit I still can't seem to cut up a peach properly so there's only so many recipes I make that don't require perfectly sliced peaches, but this parfait works a treat. I thoroughly enjoyed having something a little different from my usual chia pudding - it's still in the breakfast but layering it makes it feel a little more exquisite. And you could easily make this into a delightful dessert and swap the yoghurt for vanilla ice cream! In fact I think I'll do just that whilst I can still get my hands on those peaches :)

Prep: 5 miniutes
Cook: N/A  overnight chilling time
Serves: 1


30g Chia Seeds
120ml Soya milk
100g Soya yoghurt - I use this one
x2 Peaches cut up into cubes or slices


✿In a bowl mix the chia seeds with the soya milk and leave overnight in the fridge to set.
✿The next morning, add a splash more milk and stir the chia pudding to loosen up a bit. In a jar add half of the chia mix to the bottom then top with 50g of the yoghurt. Add half of the cubed peaches then repeat the process finishing with the peaches. Enjoy!
