Tofu Scramble on Toast

No need for eggs in this recipe with the simplicities of yummy tofu!

I know how much scrambled eggs on toast is an absolute must for some, I used to have this almost everyday for breakfast, you can't beat a buttery piece of toast topped with some fluffy eggs. But an easy swap for a vegan/plant-based diet is to simply replace the eggs with tofu! This has been done by many a chef, food blogger etc, but for those who follow my blog may be new to the idea, so I'm here to entice you of its deliciousness. 

The wonderful thing about tofu is that you can mash it up to replicate scrambled eggs, and it has the exact same texture so you're already halfway there. Next add in some Kala Namak (black salt) and turmeric and you've got that lovely eggy smell and colour! If you don't have kala namak, not to worry it's only needed for the eggy smell but you can add some more garlic or other herbs. Also you can add any vegetables to this breakfast that you like, or swap the toast for a yummy bagel or pop in a wrap like I did here. 

This is a perfect dish for breakfast or brunch!

Prep: 5 minutes
Cook: 15 minutes
Serves: 2-3


1 block The Tofoo Co Tofu mashed with a fork
2tsp Kala Namak (black salt)
1tsp Turmeric
2 Garlic cloves minced
3 Spring onions finely chopped
100g Cherry tomatoes halved
2 big handfuls Spinach
Salt and Pepper
Toast - we had freshly made sourdough but any bread works well


✿Prepare the ingredients and then heat a large non-stick frying pan with a drizzle of oil. Add the tofu and fry for about 5 minutes until starting to brown.
✿Add in the spices and coat the tofu, fry for another 2 minutes.
✿Add the spring onions and the tomatoes and fry so that the tomatoes start to burst and release their juices. Finally add in the spinach and stir altogether till it has wilted. Season with salt and pepper. 
✿Remove from the heat and divide between the toast for about 2 or 3 people depending how hungry you are! Enjoy!
