Banana, Date Tahini Porridge

An Indian inspired porridge, full of warm spiced flavours is the best breakfast to start your morning!

This porridge is the BEST bowl of porridge I have ever truly had or made. I know it is a huge statement but every bite I had was incredibly decadent. The flavours just come together so perfectly, so more-ish, so warm. Naturally sweetened with the dates and banana, and full of delicious spices it is filling and so satisfying I could not recommend this enough especially on a cold day. I took inspiration for this porridge from Dishoom's very own dish as I had never imagined making a porridge quite so different as this so it seemed a challenge for my own taste buds. Dishoom is a chain of restaurants in London that resembles the old Irani cafes in Mumbai and the food they produce is truly quite mesmerising. I've not had breakfast there yet so making it at home was my only choice for now but I am heading there as soon as I can to try it all.

1 banana
45g Oats
200ml Soya milk or water
2 Cardmom pods
½tsp Garam Masala
2tsp Cinnamon
Pinch of salt
2 Dates chopped
1tsp Tahini

✿Remove the seeds from the cardamom pods by using the flat edge of a knife and pressing down. Add the seeds along with the cinnamon and garam masala to the pan and toast about 2 minutes.
✿Mash half of the banana and add this to the pan along with the oats and milk and dates stirring together.
✿Simmer the porridge on a medium to low heat for about 10 minutes stirring frequently to prevent sticking. It should be soft and creamy. Sprinkle in the salt and then remove from the heat.
✿Spoon the porridge into a bowl and top with the remaining half banana cut into slices, and drizzle over the tahini and a sprinkle more cinnamon. I think this would go along nicely with a chai latte. Enjoy!
