Coconut & Raspberry Chia Pudding

A coconut flavoured protein chia pudding with delicious raspberries!

I love Chia Puddings, they are one of my favourite breakfast to have! Also I think it's worth mentioning, I don't always add protein powder to the recipes I make, but I found a vegan coconut flavoured one from Purition and it worked wonders with this little breakfast, so it deserved some limelight in this recipe. Another note to make about this recipe is that I've used coconut milk from a can and that my friends, is a game changer! So creamy and a much better coconut taste than you get from a carton so I highly recommend using it. I added raspberries just for a nice sweet combination, but you can always swap them for strawberries, pineapple or mango could work well. This is a really simple recipe, and all you need to do is prep the night before and in the morning you won't need to make much fuss :)

Recipe

Ingredients

30g Chia seeds
60ml Coconut Milk from a can
100ml water 
1 scoop Coconut or other flavoured vegan protein powder - I used 
Handful fresh or frozen raspberries or fruit of choice
1 tbsp Raspberry jam
Flaked/desiccated coconut chips

Method

✿Mix together the protein powder with the water th in a jar or bowl en add stir in the chia seeds and mix it altogether.
✿Leave in the fridge overnight to set then in the morning you can add a splash more water or milk to loosen it up a bit.
✿Top with the raspberries, jam and coconut. Enjoy!
